<h1>Con l´Olivo della Strega la Maremma ritrova la tradizione dell´olio</h1>
<h2>Premiate le aziende produttrici dei migliori extravergine dell´anno. Grande successo dell´ìniziativa svoltasi a Capalbio</h2>

<p align="justify">Ha registrato un numero importante di presenze la dodicesima edizione dell´iniziativa itinerante «Olivo della Strega», organizzata da Provincia e Camera di Commercio, in collaborazione con il Comune di Capalbio, l&#8217;associazione produttori olivicoli, l&#8217;associazione Strada del Vino «Colli di Maremma», la Cantina di Capalbio, la Regione Toscana e Agenzia regionale per lo sviluppo e l&#8217;innovazione del settore agroforestale, per promuovere e valorizzare le migliori produzioni olearie del territorio provinciale.<br />
La manifestazione si è svolta a Capalbio, dove si trova «Villa settefinestre», uno dei siti archeologici più importanti d&#8217;Italia, caratterizzata dalla presenza di una cantina e di un frantoio che dimostrano come già al tempo dei romani e degli etruschi, in Maremma fosse praticata l&#8217;olivicoltura. Particolarmente apprezzato il lavoro multimediale realizzato per la Provincia dal ricercatore Gaetano Prisco che ha saputo abbinare abilmente i prodotti tipici, alla storia della Maremma, fornendo anche una dettagliata cartografia. L´opera a breve sarà consegnata agli agriturismi e ai vari operatori locali.<br />
Al termine del convegno sono state premiate le aziende vincitrici della dodicesima edizione del concorso «Olivo della Strega». Per la categoria «fruttato intenso» i vincitori sono i produttori Frantoio Franci di Montenero d&#8217;Orcia (primo premio), podere «Con iella» di Niccolò Mascelloni a Montenero d&#8217;Orcia (secondo premio), azienda «Montarlese» srl di Manciano (terzo premio).<br />
<strong>Per la categoria fruttato medio i premi sono stati assegnati all&#8217;azienda di Erica Pellegrini di Istia d&#8217;Ombrone (primo premio) (<a href="http://www.oliosassibianchi.it">www.oliosassibianchi.it</a>),</strong> alla società agricola «Clivio degli Olivi» a Capalbio, (secondo premio), all&#8217;azienda «Potentino» di Seggiano, (terzo premio).<br />
Per la categoria fruttato leggero, infine, i vincitori sono: l&#8217;azienda agricola di Rampi Ungar, in località Casetta a Roccastrada (primo premio), l&#8217;azienda agricola di Noris Guidoni al Puntone di Scarlino (secondo premio) e l&#8217;azienda agricola «I Poggetti» di Castiglione della Pescaia (terzo premio). 			<content:encoded><![CDATA[<p> <strong>&#8220;Olivo della Strega&#8221; 2009 : ecco i premiati </strong></p>
<p>La Camera di commercio e la Provincia di Grosseto hanno organizzato la XV edizione del concorso provinciale</p>
<p>Si è svolta sabato 28 marzo la premiazione del concorso riservato ai produttori di olio extra vergine di oliva della provincia di Grosseto “Olivo della Strega” promosso da Provincia e Camera di commercio di Grosseto.</p>
<p>La premiazione quest&#8217;anno si è tenuta presso il Castello di Potentino, a Seggiano.</p>
<p>Soddisfazione da parte degli organizzatori: “Le produzioni agroalimentari di qualità rappresentano senza alcun dubbio una delle eccellenze del nostro territorio” commenta il presidente della Camera di commercio Giovanni Lamioni “Le Istituzioni, per prime, hanno il compito di valorizzare queste risorse nel modo migliore, soprattutto in momenti come quello attuale, di grave crisi economica.</p>
<p>Promuovere la conoscenza delle esperienze di qualità, in grado anche di offrire nuovi strumenti di valutazione ai consumatori, ha un significato rilevante, strategico: siamo certi che rassegne come &#8216;L&#8217;olivo della Strega&#8217; siano, a questo fine, particolarmente utili e degne di attenzione.”</p>
<p>“L’olivo della Strega – spiega l’assessore provinciale allo Sviluppo rurale Alidiano Bargelli – ha accompagnato il rinnovamento della produzione di olio extravergine di oliva nella provincia di Grosseto.<br />
Nel corso degli anni le produzioni si sono qualificate e specializzate, le aziende olivicole e i frantoi hanno affermato sul mercato un prodotto di elevata qualità sempre più riconosciuto dai consumatori.<br />
Un ringraziamento a tutte quelle aziende agricole e di trasformazione che hanno permesso di raggiungere questi importanti risultati”.</p>

From this moment begins the aging process. All of this occurs when the olive arrives at maturity and falls spontaneously from the tree. As a rule, the mature olive gives oil in large quantities, of a light odor and taste, but it is more difficult to conserve. Instead, the immature olive gives less oil, however it can be conserved for a longer period and with strong olfactory-gustatory notes.</span></p>

<p class="MsoNormal" style="margin:0 3.2pt 0 0;"><span style="font-size:12pt;color:#333300;font-family:Arial;">The more harmonious product, obviously, is that which is derived from olives at the right point of maturation. The more able olive grower therefore, is the one who knows how to perceive with greater precision the optimum moment in which the olives are ready to produce oil in greater quantity which is more easily preserved. In other words, the typology of the product depends on the level of maturation of the olives. In particular there can be distinguished three types of extra-virgin olive oil according to the state of maturation of the olives.</span></p>

The pasta obtained from the olives is spread in thin layers on filtrating disks (fiscolus) and piled one upon the other on a platform, intermixed with heavy metal disks (usually the sequence is composed of three disks of pasta, one filtrating disk and one steel disk). An hydraulic press completes the work. The method most used today however is the centrifuge, whose principle, as noted, is based on the different weight specific to the substances. The pasta is then made to rotate in a container (drum) and thanks to centrifugal force the remaining vegetal matter (olive residues) and the must (juice) separate, arranging themselves one upon the other as do the layers of an onion and they are then removed by a scroll. With both methods the must is obtained, a rather dense liquid constituted of oil and water that must be separated. At one time they used skimming, or rather, they waited until the oil, lighter than water, spontaneously rose, to then collect it with a “lecca”, a type of flat ladle. Today there exists special vertical centrifuges (separators). The last operation is the filtering which eliminates the residual impurities.  </span></p>

<p class="MsoNormal" style="margin:0 3.2pt 0 0;"><span style="font-size:12pt;color:#333300;font-family:Arial;">–<span>    </span>Labbra screpolate: usare l’olio extravergine di oliva…altro che burro cacao…</span></p>
<p class="MsoNormal" style="margin:0 3.2pt 0 0;"><span style="font-size:12pt;color:#333300;font-family:Arial;">–<span>    </span>Mal di orecchie: cotone con olio d’oliva caldo</span></p>

<p class="MsoNormal" style="margin:0 3.2pt 0 0;"><span style="font-size:12pt;color:#333300;font-family:Arial;">–<span>    </span>Per super abbronzatura: per pelli super ambrate olio e limone scekerati…fa miracoli ma occhio alle ustioni!!! Da evitare alle Maldive….</span></p>
<p class="MsoNormal" style="margin:0 3.2pt 0 0;"><span style="font-size:12pt;color:#333300;font-family:Arial;">–<span>    </span>Per le scottature (con pelle intatta): emulsionare acqua e olio, fino a creare una crema chiara. Cospargere le parti di pelle arrossata con l’emulsione e lasciare agire l’impacco tutta la notte. </span></p>
<p class="MsoNormal" style="margin:0 3.2pt 0 0;"><span style="font-size:12pt;color:#333300;font-family:Arial;">–<span>    </span>Maschera purificante: mescolare del miele, dello yogurt con un cucchiaio di spremuta di limone e uno d’olio. Applicare e dopo 30 minuti sciaquare.</span></p>
<p class="MsoNormal" style="margin:0 3.2pt 0 0;"><span style="font-size:12pt;color:#333300;font-family:Arial;">–<span>    </span>Per rivitalizzare i capelli, una volta a settimana prendete un asciugamano, lo mettete sulle spalle, prendete la bottiglia di olio d’oliva ed iniziate a mettervene un po’ sui capelli, piano, piano, dalle radici fino alle punte, pettinateli piano, piano, fino a quando tutta la testa è bella lucida… ora statevene tranquille per casa, senza ungerla tutta e dopo un oretta, anche 2, lavatevi i capelli come di consueto, shampoo e balsamo finale. Il costate uso di questa pratica, dovrebbe aiutare il capello a riprendere lucentezza e vitalità.</span></p>
<p class="MsoNormal" style="margin:0 3.2pt 0 0;"><span style="font-size:12pt;color:#333300;font-family:Arial;">–<span>    </span>Per evitare che la pasta si incolli durante la cottura, basta aggiungere dell’acqua dell’olio.</span></p>
<p class="MsoNormal" style="margin:0 3.2pt 0 0;"><span style="font-size:12pt;color:#333300;font-family:Arial;">–<span>    </span>Per eliminare dal proprio viso tracce di maquillage basta utilizzare un batuffolo di cotone imbevuto d’olio.</span></p>
<p class="MsoNormal" style="margin:0 3.2pt 0 0;"><span style="font-size:12pt;color:#333300;font-family:Arial;">–<span>    </span>Per evitare che le foglie del basilico fresco messe sulla pizza diventino secche durante la cottura, basta immergerle un istante nell’olio.</span></p>
<p class="MsoNormal" style="margin:0 3.2pt 0 0;"><span style="font-size:12pt;color:#333300;font-family:Arial;">–<span>    </span>Per togliere i cerotti senza soffrire, prima passate sulla parte un batuffolo di cotone imbevuto di olio.</span></p>
<p class="MsoNormal" style="margin:0 3.2pt 0 0;"><span style="font-size:12pt;color:#333300;font-family:Arial;">–<span>      </span>Per mantenere il bronzo lucido si passa con dell’olio d’oliva, successivamente con uno straccio inumidito con dell’acqua e ammoniaca.</span></p>
<p class="MsoNormal" style="margin:0 3.2pt 0 0;"><span style="font-size:12pt;color:#333300;font-family:Arial;">–<span>      </span>Per evitare screpolature alle mani, creare un’emulsione di olio, acqua, e succo di limone (perti uguali), e massaggiarvi le mani.</span></p>
